Hi everyone..
since few days I was busy clicking pictures and didn't get time to post..
so today I decided to post aloo paratha...its one of my favourite for my son's lunch box..
its really a easy item to be prepared.. provided if u have done some homework the previous day..if not also its not much time consuming... you can always boil the potatoes previous day and make the dough also well ahead...
I am using just potato for the filling as my kids don't eat much spicy food.. but if you want you can add finely chopped onions , green chillies and coriander leaves.. yet I am trying to keep it simple as its just for kids..
please go through my tips at the end to avoid any disaster๐
lets get to work
ALOO PARATHA
preparation time - 20 mins
cook time - 15 mins
total time - 35 minutes
INGREDIENTS
atta / chapathi flour - 2 cups
salt - 2 tsp or as required
oil - 2-3 tbsp. for making chapathi dough
water - as required for making the dough
for paratha filling
potato - 3 to 4 medium sized potatoes
chilli powder - 1/2tsp
coriander powder - 1/2 tsp
turmeric powder - 1/2 tsp
hing/astefodia -1/4tsp
salt -1/2 tsp
ginger garlic paste -1/2 tsp
Recipe:
1. first of all make the chapathi dough using the above given measurement.
2. boil the potatoes for 15-20 mins in the pressure cooker( check the tips for boiling)
3. now peel the boiled potato and smash the potatoes using the potato smasher. I would suggest using a smasher as it would give you a very fine smashed potatoes.. using hands you cant smash it into a fine mixture
4.now add salt ,chilli powder,corriander powder,turmeric,hing,ginger garlic paste to the potato mixture
5.now again using the smasher mix all the ingredients together nicely
6.now the stuffing is ready. take little oil in a plate and dry atta for dusting.
7.now take a small ball of the dough and grease your hands with oil
8. make a small bowl shape with the dough with your greased hands
9.now fill the bowl with the potato filling..fill upto 3/4th of the bowl..don't overfill it because when you roll it into the parata the filling will come out.
10.now this is an important step.. dust some flour on top of the filling.. we are doing this because when we close this dough and with the roller pin when we roll it the filling might get sticky to the dough and we might find it difficult to roll the paratha..but since the dry atta is on top of the filling , when you roll the paratha the filling may not stick to the dough...this is one tip to prevent the filling getting spilled while rolling
11. now bring the corners of the dough together and make it look like a ball..
12. now flatten the ball with your hand lightly..i mean gently....dust it with flour and start rolling it like the usual chapathi...but roll it gently with equal pressure.( check the tips for rolling)
13.now if you are a beginner, I would suggest make 3-4 paratha suffing ready before switching on the stove.. because by the time the paratha in the tawa gets done you wont be able to make the other one ready.. so just make the stuffed ball ready and then just do the rolling part when the paratha is cooking.
14. regarding the heating of the tawa.. always heat the tawa on medium heat for paratha.. as we will use ghee for paratha on high flame the paratha might get burnt.now just apply little ghee before placing the paratha on the tawa
15. gently remove the paratha and place it on the tawa.. once the first side is half cooked start to turn to the other side..
16 apply ghee around the sides of the paratha and turn over
the paratha will fluff like this if you would have rolled it will equal pressure on the paratha while rolling..
now cook both the sides until its done..
Tips ( common mistakes to watch out )
1. don't cut the potatoes for boiling or while pressure cooking.. as cut potatoes may become soggy and your filling may become very soggy and you wont be able to roll it.
2. never boil the potatoes too much.. again that will also makes the filling watery.
3. better use the smasher, as it makes the filling very smooth and easy to handle.. if there are lumps in the filling you will find it difficult to make the paratha..
4. regarding the spices you can adjust according to your taste ,as my measurements are for a bit less spicy paratha..
5. the chapathi dough shouldnot be very loose or soggy as you wont be able to make the cup shape for the filling.
6.and now I come to the main point.. rolling of the parath...
always hold the ends of the roller pin.. give equal pressure with both the hands.. never ever apply too much pressure..handle the roller like you are painting with the brush.. trust me that's the trick.. the chapathi will fluff only if the thickness is equal throughout..
this trick will come with little practice..no big deal,,,so don't get too much worked out on it..
( I think I got it after few...nah..lots of failures.. ๐... I am not scaring you guys.... I am just telling just keep trying..and you will get it...)
7. try to cook through out with medium flame.. because high flame and ghee are not good partners.. if you feel tawa is too much heated and flames coming out.. reduce it too sim completely and try to put the paratha after2 mins....
last but not least...
hey guys its just aloo paratha..not rocket science.. so don't worry..if you don't get it right there are always other option( like use the filling to make sandwich ..that's what I did during my first failure attempt..so that's when I found out filled sandwich....๐... that was really a EUREKAAAA MOMENT )
